Ingredients
- 1 zucchini per person
- {sauce will serve approx 4 peeps}
- 1 red pepper
- 1-2 chillies (depending on how hot you like it)
- 1/2C baby spinach leaves
- 1-2 fresh tomatoes
- 1/4 Spanish onion
- 1 clove garlic
- 1t salt
- 1/4C sun dried tomatoes
- A small handful kalamata olives
- 1-2T olive oil
Steps
- βUsing a spiraliser, mandolin, or vege peeler, make your zucchini noodles. Place in bowl.
- Chop tomatoes, garlic, onion, chilli, sun dried tomatoes, spinach, and red pepper, and place in a (different) mixing bowl.
- Remove seeds from olives and add to sauce bowl.
- Mix all ingredients together, with olive oil and salt. Allow to rest for around 15 minutes. Strain off excess liquid as the veggies wilt.
- Add sauce to zucchini noodles, and mix in with your hands.
- Serve. With extra chilli!
