- 1 bunch basil
- 1/2-1C olive oil
- 1/2 bunch kale
- 2 cloves garlic
- 1T salt
- A few sun dried tomatoes (optional)
- 1 medium sized zucchini (per person)
- Place basil, kale, garlic, oil, and salt in blender, and blend.
- Using a spiraliser, mandolin, or vege peeler, make your zucchini noodles. Place in bowl.
- Chop sun dried tomatoes, if you’re using them, and add to bowl.
- Add pesto (you won’t need all of it), and mix in with your hands.
