• 1 bunch basil
  • 1/2-1C olive oil
  • 1/2 bunch kale
  • 2 cloves garlic
  • 1T salt
  • A few sun dried tomatoes (optional)
  • 1 medium sized zucchini (per person)


  1. Place basil, kale, garlic, oil, and salt in blender, and blend.
  2. Using a spiraliser, mandolin, or vege peeler, make your zucchini noodles. Place in bowl.
  3. Chop sun dried tomatoes, if you’re using them, and add to bowl.
  4. Add pesto (you won’t need all of it), and mix in with your hands.
  5. Serve.
