Ingredients

  • 1 zucchini per person
  • {sauce will serve approx 4 peeps}
  • 1 red pepper
  • 1-2 chillies (depending on how hot you like it)
  • 1/2C baby spinach leaves
  • 1-2 fresh tomatoes
  • 1/4 Spanish onion
  • 1 clove garlic
  • 1t salt
  • 1/4C sun dried tomatoes
  • A small handful kalamata olives
  • 1-2T olive oil

Steps

  1. ​Using a spiraliser, mandolin, or vege peeler, make your zucchini noodles. Place in bowl.
  2. Chop tomatoes, garlic, onion, chilli, sun dried tomatoes, spinach, and red pepper, and place in a (different) mixing bowl.
  3. Remove seeds from olives and add to sauce bowl.
  4. Mix all ingredients together, with olive oil and salt. Allow to rest for around 15 minutes. Strain off excess liquid as the veggies wilt.
  5. Add sauce to zucchini noodles, and mix in with your hands.
  6. Serve. With extra chilli!
